2018 Zinfandel: Jammy and fruit forward is the best way to describe this classic Old Vine varietal. The descriptions of aromas, flavors and mouthfeel will continue to flow as the glass is refilled. Our climate in the Mid-Atlantic makes growing this grape variety too challenging, but working with out-of-state growers and brokers has been a flavorful experience. Enjoy this hearty Zin with a few well-spirited souls.
2017 Tre Sorelle: Italian for three sisters, this wine is a tribute to all women and dedicated to the spirit of three sisters. Individual and uniquely different, together they are truly amazing. Enjoy the combined personalities of this wine. Blend: 40% Merlot; 25% Petit Verdot; 20% Cabernet Franc; 15% Cabernet Sauvignon.
2018 Cabernet Franc: The ground, grower and grape come together to create the terroir that this estate-grown jewel expresses. Through judicious barrel choices and careful blending, our reserve Cabernet Franc represents the next level of quality Virginia wine.

2019 Chardonnay: This 100% Loudoun (VA) wine is such a delight. The nose is filled with incredible fresh white blossoms with vanilla and fresh coconut. The palate bursts open with fresh green apple and bright lemons with creamy, smooth butterscotch on the finish.
2020 “Something White”: The varietal composition of the Something White changes each year, giving Fabbioli’s winemaker the creative license to select the best available fruit from the year’s harvest. This simplistically elegant wine is floral, fruity, and has a crisp finish that will complement many occasions and dishes.
Una Pera: Lightly sweet, crisp and fruitful, we make this wine from locally grown Asian pears. Enjoy this wine as an aperitif with some lighter cheeses and great company

2015 Tannat: This Tannat is a nod to the visionaries who saw the potential of this grape in Loudoun County (VA). Inviting aromas lead into a hardy and firm mi palate. The tannins are balanced with acidity and showcase dark berry fruit and earthy flavors and oak on the palate. This wine will rival a Syrah and does will in the mid-Atlantic’s cool climate region, for which intensity and structure prevail. Enjoy with medium rare cooked meats and sharp cheeses.

11. “Cider with an Attitide”
One bottle of Fabbioli’s “Attitude Adjuster”: a crisp, dry cider (7% alcohol) made from 100% honey crisp apples infused with Chinook hops. The crispness of the apples provides a dry, balanced product with hops adding the sweetness and sharpness of grapefruit. Named after Goldie, Fabbioli’s moody winery cat, this cider is light and refreshing, making it go down easy on a hot day.

One bottle of Fabbioli’s port-style NV Royalty: This after dinner winter warmer is a traditional port style wine fortified with our own brandy. The extended time in barrel has allowed the different components to develop into a complex flavor profile. The nose opens with smoke and hickory, followed by blackberry and vanilla. Cinnamon, black pepper, and vanilla add a little spice to the blackberry fruit on the palate. Catoctin Creek® was founded in 2009 as the first legal distillery in Loudoun County since before Prohibition. The name “Catoctin” derives from the Indian tribal name “Kittocton” which, legend has it, meant “place of many deer”. Catoctin describes a range of mountains and the creek which flows picturesquely past the distillery and into the Potomac River and Chesapeake Watershed.
Roundstone Rye® is a very unique rye whisky, made completely from scratch at our distillery in Purcellville, Virginia. This pre-Prohibition style rye whisky is made from 100% rye grain, sourced locally when available. It is mashed, fermented, distilled and aged completely in our distillery, before bottling at a very sippable 80 proof. Aged in new Minnesota white oak casks for just under two years, the whisky is smooth, woody, with that true grain character achieved in a relatively young whisky. Roundstone Rye has a delicious woody taste, with notes of caramel, rich butter toffee, and just a hint of lemon in the nose.
