2022 Cabernet Franc: A medium-bodied wine with characters of allspice, berry fruit, herbs, and caramel, this    Cabernet Franc could help define the Virginia wine industry.

2020 Chardonnay: This 100% Loudoun (VA) wine is such a delight. The nose is filled with incredible fresh white blossoms with vanilla and fresh coconut. The palate bursts open with fresh green apple and bright lemons with creamy, smooth butterscotch on the finish.

2022 “Something White”: The varietal composition of the Something White changes each year, giving Fabbioli’s winemaker the creative license to select the best available fruit from the year’s harvest. This simplistically elegant wine is floral, fruity, and has a crisp finish that will complement many occasions and dishes.

Una Pera: Lightly sweet, crisp and fruitful, we make this wine from locally-grown Asian pears. Enjoy this wine as an aperitif with some lighter cheeses and great company

4. “Wine and Pasta for Two”

One bottle of Fabbioli Cellars (Leesburg, VA) Tannat, with Mrs. Miller’s egg noodles and a jar of Cucina Antica Marina Pasta Sauce.

2017 Tannat: This Tannat is a nod to the visionaries who saw the potential of this grape in Loudoun county (VA). Inviting aromas lead into a hardy and firm mi palate. The tannins are balanced with acidity and showcase dark berry fruit and earthy flavors and oak on the palate. This wine will rival a Syrah and does will in the mid-Atlantic’s cool climate region, for which intensity and structure prevail. Enjoy with medium rare cooked meats and sharp cheeses.

5. “Not-your-Average (and not just Apple) Cider”

One bottle of Fabbioli’s “Perry” Pear Cider (7% alcohol). Crisp, dry, and refreshing, this pear cider has bright carbonation that highlights the fresh pear flavors.

One bottle of Fabbioli’s “Ladies Man” Apple Raspberry Cider (7% alcohol): Warren (the cat on the label) is a ladies man. Often seen parading around the tasting room, Warren is coy and playing it cool. Women flock to his side, believing they are the only one in Warren’s world. Just like Warren, this libation is slightly sweet, but irresistible. Bright and fruity, this cider is subtly sweet with a balance of zest from the carbonation.

One bottle of Fabbioli’s “Attitude Adjuster” Apple cider (7% alcohol). The Attitude Adjuster is a crisp, dry cider made from 100% honey crisp apples infused with our Chinook hops. The crispness of the apples provides a dry, balanced product with hops adding the sweetness and sharpness of grapefruit. Named after Goldie, our moody winery cat, this cider is light and refreshing, making it go down easy on a hot day.

The extended time in barrel has allowed the different components to develop into a complex flavor profile. The nose opens with smoke and hickory, followed by blackberry and vanilla. Cinnamon, black pepper, and vanilla add a little spice to the blackberry fruit on the palate. Chesapeake Bay: We like to call the flavor “Elevated Essence of the Chesapeake”.  A zesty pepper sauce using a myriad of spices, apple cider vinegar, bay leaves, jalapeños, mustard and ginger.  We think it’s great with everything! Pair with crabs, oysters, shrimp, clams and fish. Excellent with eggs, steak, lamb, chicken, vegetables and french fries. Heat: 2/10

Texas: We took on Texas with a curious appetite for barbecue. After touring the Lone Star state, we chose serranos, cucumbers and brisket rub to represent the essence of Texas. Pair with barbecued meats, grilled vegetables, tacos, pulled pork and eggs. Heat: 5/10

Virginia: Inspired by an 1850’s Virginia BBQ recipe with peaches, peanuts, jalapeños, habaneros, rye whiskey and smoked paprika. Pair with pulled pork, grilled meats, or vegetables! Heat: 6/10

Assam: Assam is a state in northeastern India and home to the ghost pepper. As an homage to the region, we created a fragrant curry with a depth of flavor which perfectly balances the warmth of the ghost pepper and the added heat of the 7 pot primo. Pair with reduced coconut milk for an amazingly quick, yet complex curry. Heat: 7/10

17. “A Trio of Distilled Fruits”

One bottle of Catoctin Creek Pearousia Pear Brandy. Pearousia® is a very special collaboration between Fabbioli Cellars and Catoctin Creek. Doug Fabbioli, owner and vintner at Fabbioli Cellars, produced a lovely pear wine, and we distilled it into brandy. After being casked in oak for a time, this pear brandy has emerged as a truly lovely and unique offering, and our first fruit spirit. This pear brandy maintains the fresh aroma of the fruit, where you can smell the light and musky elements of pear intertwined with the caramel and vanilla of the oak.

One bottle of Quarter Branch Apple Brandy. Quarter Branch Apple Brandy started life as a collaboration between Catoctin Creek and Blue Bee Cidery in Richmond, Virginia. Courtney Mailey, the proprietor of this exciting apple cidery, brought us a nearly infinite supply of apple wine samples, from which we picked the perfect blend of heritage apples: Old Winesap, Arkansas Black, Albemarle Pippin, Stayman, with a tiny touch of Pink Lady.

One bottle of Catoctin Creek Short Hill Mountain Peach Brandy. Short Hill Mountain lies in far western Loudoun County (VA), just west of the Catoctin Valley. Catoctin Creek Short Hill Mountain Peach Brandy is made from local western Loudoun peaches, distilled, aged and bottled at the peak of perfection. Think “peach cobbler” in a glass.

18. “Good Things Come in “Petit” Packages”

One bottle of Fabbioli Cellars 2018 Petit Verdot: Virginia is developing a reputation for Petit Verdot. Very dark with a full middle palate and firm acidity, this variety seems to consistently deliver the goods vintage after vintage. Pair this wine with richyly seasoned red meats, aged cheeses, and wild game.

One bottle of Fabbioli Cellars 2020 Petite Sirah: Petite Sirah offers dramatic aromas and flavors that makes wines produced from it just as enjoyable when sipped on their own as with food. In the summer, Petite Sirah and blends that incorporate it tend to pair well with barbecue, and in winter, the richness and depth of flavor in those bottles make them comforting and warming on a cold, dark night.

20. 2021 Lingua Franca Avni Pinot Noir

Estate grown Avni 2021 PN is subtle and mouth filling, immediately pleasing and rich. The large proportion of complexly flavored fruit from shallow Gelderman soils combines seamlessly with the richer fruit flavors of Pommard and 115 clone Pinot Noir on Jory and Nekia soils. The wine has many layers that unfold with both red and black cherry fruit, tea, rose petal, savory and mineral nuances, finishing with a round, plummy texture. 2021 Avni will count among the best we have ever made.

22. 2022 The Prisoner Red Blend

The Prisoner Red Blend was inspired by the wines first made by the Italian immigrants who originally settled in Napa Valley. The Prisoner is now the most recognized red blend, leading the resurgence of interesting blends by incorporating Zinfandel with the unlikely mix of Cabernet Sauvignon, Petite Sirah, Syrah, and Charbono. Bright aromas of ripe raspberry, vanilla, and coconut give way to flavors of fresh and dried blackberry, pomegranate, and vanilla, which linger harmoniously for a smooth and luscious finish.

Caymus has a signature style that is dark in color, with rich fruit and ripe, velvety tannins – as approachable in youth as in maturity. Cabernet grapes are farmed in eight of Napa’s 16 sub-appellations, with diversification enabling Caymus to make the best possible wine in a given year.

An alluring plum red, with scents of dark cherries, chocolate shavings and violets. A hint of Napa Valley dust comes through on the nose, which has an equal balance of fruit, oak and earthiness. Enters the palate with a soft suppleness, peaking with flavors or cassis, dark berries, lavender and nutmeg. Texturous and fills the mouth. The exceptionally long finish displays a harmony of grippiness, vanilla oak and lush fruit.

This medium-bodied wine is harmonious, with forward, plump fruit and a silky texture balanced by gentle tannins and elegant structure. The very typical Pinot aromas and flavors of red cherries and wild strawberries are complemented by a delicious, lingering finish.

South Africa, Western Cape. 38% Merlot, 31% Cabernet Sauvignon, 23% Pinotage, 8% Shiraz. Red fruit and spice are evident on the nose with hints of tobacco and cedar. The palate is full yet restrained, with a silky tannin structure, and long lingering finish. The 2003 Gary Player Major Championship Series is drinking well on release and with correct cellaring will continue to improve for up to 10 years from vintage. It will complement rich dishes and finely flavored cheeses.
